Dedicated to making "true cider", once the most popular drink in America, their main source of apples are those that they forage themselves around the Hudson Valley and Lower Catskills. ‘Summitville’ is a dry, unfiltered locational cider made from uncultivated apples foraged from abandoned and wild trees on the hills above Summitville and the Sandberg Creek in Sullivan County. This cider is light and crisp, with bright green and red apple notes and a clean, racy finish with a touch of earth. An excellent aperitif, brilliant when paired with goat cheese.
