Black Manhattan: Substitute Averna for sweet vermouth and add Angostura and Regan’s Orange Bitters
Amaro Averna has been representing true Sicilian craft since 1868 with a secret recipe by the Benedictine monks of Abbazia di Santo Spirito. It was gifted to Salvatore Averna, a textile merchant, by the monk Frà Girolama as a token of gratitude for his commitment to the local community. The recipe was then passed on to his son, Francesco, and in 1895 during a visit to King Umberto I, he was gifted a golden brooch with the Savoy House emblem to mark the drink’s evergrowing status. In 1912, Vittorio Emanuele III bestowed them the right to print the royal coat of arms with the inscription “Royal Household Patent” on the bottle. Today, Averna is still made using the traditional recipe. A lengthy infusion process include: a special selection of herbs, roots, and natural spices, pomegranate, and essential oils of bitter oranges and lemons. It has a mouth-coating bittersweet taste, with notes of orange, licorice, rosemary, sage, and juniper.
