December 27, 2024 | taste the stars... happy new year!

An Exploration of Effervescence

The history of sparkling wine is woven with serendipity; a story of kismet happenstance. A gentle reminder that surrendering to circumstance can lead to the happiest of accidents, and perhaps inspire the creation of new legacies and traditions. Delicious ones, at that. Join us for a guided tour of CO2 and all its nuance, one bottle at a time.

Our opening act is the 2021 Bent Mountain cider from Patois Cider in Virginia, a gorgeous history lesson on the heart of apple-country. Queued up next is Mersel's 2022 Leb Nat Rosé from Lebanon, a wine made utilizing the ancestral method that is equal parts fresh fruit and savory earth. A ch-ch-ch-ch-ch-ch-cherry bomb. The headliner? Champagne, of course. This particular bottle from Chavost is a natural shoo-in (no, really, it's organic and low-intervention), a striking balance of Maria Callas's elegance and Courtney Love's pop-punk attitude.

All of these bottles are poised to pop and party, just make sure you do so at a 45 degree angle and point away from your loved ones. No accidents on our watch.

As the curtains close on 2024, and 2025 waits in the wings, join us for a toast to the future and a palate cleanser of the past. May this new year bring us collective health and happiness.
