Domaine du Bouchot has farmed organically since 2006, when Pascal Kerbiquet took over operations. When Pascal subsequently turned over the reins to Antoine Gouffier in 2018, Antoine began the process of converting to biodynamic farming. The name of this cuvée, “Terres Blanches,” refers to the white Kimmeridgian limestone that lends a beautiful minerality to this wine. Harvested at full ripeness and fermented with indigenous yeasts, this Pouilly-Fumé receives no added sulfites and is bottled with only light filtration. Lemon blossom and crushed seashell, with just a touch of toast, lead to peach on the palate, with supple texture and a long, saline, fresh lemon finish. Certified biodynamic, low-intervention/natural wine.
