Convincing a cooperative of over seventy multi-generational growers in the village of Chavot to produce a range of wines without additives or sulfites is no small feat, and yet, at the age of 30, chef de caves Fabian Daviaux said, “wait, hold my beer.” Beginning with the 2019 vintage, he produced a range of zero-sulphur wines that were evocative of the unique clay-limestone terroir of the organic vineyards existing at the intersection of Côte de Blancs and Valle de la Marne. Despite all of the wines being made from a single vintage, they do not receive official vintage designation given the short duration on tirage. Oh, and don’t even think about commercial yeasts - all fermentations are spontaneous in addition to not undergoing chaptalization or acidification. This cuvée is equal parts chardonnay and pinot meunier, with zero dosage and zero pretense. The Champagne you want for breakfast; greek yogurt swirled with raspberry and a side of toast. Certified organic, low-intervention/natural wine.
