Benoît Doussot trained as a winemaker in Burgundy before moving to the Côte des Bar to start a “micro-négociant” business with Bertrand Gautherot. Their aim with Clandestin is to help growers make the best use of “hidden” or underappreciated plots, as well as to aid in their conversion to organic farming practices. This ‘Semblables (boréal)’ cuvée draws from a series of plots of pinot noir all planted on Kimmeridgian limestone and all facing north. Because of their cooler northerly aspect, these plots produce brighter, crunchier, more mineral wine. Though it is labeled as a non-vintage Champagne, it is drawn from a single vintage (2020). It aged in older French oak barrels before lying sur lattes; the bottles were ultimately disgorged with no dosage. Just-ripe strawberry and salty minerality make for a deliciously fresh and exciting blanc de noirs. Certified organic, vegan.
