While most rum is made from molasses, the rum that in the French Caribbean is called rhum agricole is distilled from unprocessed sugar cane juice. The result is generally more complex, more sophisticated. When, as in this case, the rum is then aged in barriques from Limousin and barrels that previously held Bourbon, what you have is quite an elegant sip. Silky smooth, with a drop of caramel sweetness, this Clément VSOP also folds in a spicy element and a layer of dried fruit flavors.
