Here’s another story of corporate world-escapees: In 2004, Cristiana and Riccardo Meggiolaro decided to jump ship from their respective daily grinds, move to a farm in Veneto—technically in Soave, though they choose to label outside of the designation—and start making wine in their garage (as one does). It wasn’t long before they wanted to get even more hands on, soon taking charge of some vines a neighbor had abandoned and then planting their own hectare of wine grapes. Their first harvest was four years later and, by 2009, they were successfully farming via organic practices. Today, they work with utmost respect for nature, preserving biodiversity, planting to maximize airflow and receive favorable daytime sunlight, and banning chemical applications entirely; if a vintage doesn’t naturally turn out well, they just won’t make wine. They focus exclusively on two indigenous white varieties, garganega and durella. Sarò, or “I will be,” in Italian, is 100% the former, hand-harvested at the end of September. Whole-cluster fermented with spontaneous yeasts, it spent six months on fine lees in stainless steel, with occasional stirring. Opening with fresh floral aromas, its palate is supremely soft and mineral, matching lemon blossom notes with flavors of almond and apricot pit, ripe white peach and Comice pear. Certified organic, low-intervention/natural wine.
