The Prinčič winery is located in the village of Oslavia, just over the border of Slovenia. After spending his initial years as a winemaker selling grapes to other wineries, he founded his very own in 1993, continuing to use organic practices in the vineyards. A few years later, he started to experiment with maceration, (skin contact) in his production. Today, every wine that Dario produces sees maceration of some degree, whether red or white. Hand harvested from steep slopes composed of clay and sandstone, the grapes are destemmed, placed into large open oak vats for 8 days of maceration, and then naturally fined over the course of 6 months in stainless steel vats. Bottled unfiltered and with minimal sulfur use. A brilliant orange color in the glass, the Sivi Pinot Grigio is full bodied and extracted, showcasing notes of tamarind, apricot pit, kumquat, saffron. A unique and exciting wine with a complex edginess, this wine will surprise and delight time and time again. Organically grown, low intervention/natural wine.
