Delaware Phoenix rises again: 

Cheryl Lins first founded Delaware Phoenix in 2009 in Walton, NY, becoming both the first woman-owned distillery and the first absinthe producer in New York since the lifting of the US absinthe ban in 2007. Captivated by a New Yorker article about absinthe, she soon taught herself the intricacies of distilling, through intense home study and a lot of trial and error. Using an 8 gallon copper-pot still, locally grown organic herbs, and pure Walton well water, she personally bottled, labeled, and distributed her absinthe to bars and shops where she quickly developed a cult following and reputation as a legend in the distilling world. (Prior to her life as an absinthe pioneer, she was a legend in several other fields as well: a devout Buddhist who taught herself Tibetan to translate prayers; a highly ranked chess player; a former front-end developer for the Apple 1 computer, who wrote code to sequence genes at the start of the Human-Genome Project; and a prolific water color painter who lived in a yurt in New Mexico before moving to Walton!) Tragically Cheryl passed away from a heart attack in 2021, leaving no will or testament. 

Enter Tianna Kennedy and Ryan Jahn. Tianna first began working with Cheryl in 2011 to grow ingredients for the Delaware Phoenix distillery at Lucky Dog Farm, and in 2018, Tianna and Ryan dedicated their home garden in the Charlotte Valley to her distillery. That same year Cheryl took them on as official apprentices, with the intent of transitioning the distillery when Cheryl retired. After a two year bureaucratic nightmare of paperwork, Tianna and Ryan got the distillery back up and running, and in July 2023 Delaware Phoenix rose again! 

‘Meadow of Love’ offers delicate warm floral notes, thanks to the presence of violets among its many other botanicals that swirl brightly alongside an anise and fennel louche.
