Versatile and delectable, rosé should be considered a year-round staple. This one earned somewhat of a cult following at our shop years ago and we are thrilled to finally have it back on the shelf! Established as an eight-hectare operation at the foot of Mount Sainte Victoire, the estate (formerly known as Domaine Sainte Lucie and then as Guillaume & Virginie Philip) was founded in 1979 by Michel Fabre, and is now run by his daughter, Virginie Fabre, and son-in-law, Guillaume Philip. Today covering a much larger 30 hectares under vine, it's farmed sustainably (the vineyards are leased to a shepherd whose sheep do their magic in helping revitalize the soil) and has received the Award for Excellence in the Concours Général Agricole exhibition recognizing their high quality production standards. Though they produce a handful of white and red bottlings, pink wine is by and large their hallmark. Pouring a pale, almost translucent rose-petal pink, this one abounds with elements of white flowers, crushed herbs, bright citrus peel, delicate raspberries and stony minerals. Sustainably grown.
