For over 40 years Jean Chauvenet, along with his son-in-law, Christophe Drag, built this domaine into one of the most prestigious producers in Nuits-Saint-Georges. Their holdings are impressive: over 9.5 hectares including no fewer than seven premier crus, along with seriously respected Bourgogne Rouge and Villages-level cuvées. The majority of this consists of 7 hectares of Nuits-Saint-Georges village appellation parcels spread across the northern side of the village, where the soils are a classic combination of silt, sand, and gravel. Vines that average 45 years in age are farmed organically, with certification a goal for the near future, and harvest is done by hand. Traditional vinification takes place with 100% destemming and a short period of cold soaking, followed by 2-3 weeks of fermentation. The wine is then moved into small barrels where it undergoes malolactic fermentation, then 18 months of elevage before being bottled without fining or filtration. Nuits-Saint-Georges wines are not easy going when young, a true reflection of the terroir and the iron rich soils, which lend a distinct savory minerality to wines boasting dark fruit and burly tannins. Sleek layers of dark cherry, berry, and cassis mingle with spiced tea and violet notes over a firm, structured frame. Organically grown.
