Descended from an Alsatian winegrowing family with roots dating back to the 17th century, Étienne Simonis carries on a strong regional tradition. Yet, like many of his generation, he's steered the family’s domaine toward organic, and subsequently biodynamic, farming practices. With seven hectares under vine primarily around the village of Ammerschwihr, Étienne focuses on varieties with strong Alsatian associations. This pinot blanc is hand harvested and fermented with indigenous yeasts in barrel for four months followed by aging on the fine lees until bottling at the end of spring. Elegant and textured, it opens the show with notes of spice and mandarin orange zest, swiftly followed by herbal peach flavors which lead into a mouthwatering finish accented with sea salt.
