Gergő Filep makes wines alongside his father in Tállya, Tokaj. This cuvée is made from 83% furmint and 17% hárslevelű grapes grown organically on their two hectare estate, and is fermented spontaneously with ambient yeasts in a combination of stainless steel tanks, Speidel tanks, and 500 L used Hungarian oak barrels, where it also ages for 10 months. It is then bottled without fining, and with only coarse filtration. The result is fabulously potent, a muscular blend of fruit-meets-mineral. Compelling concentrated layers of lemon preserves, baking spice, crushed herbs, white peppercorns, and volcanic rockiness all swirl together and linger for a lusciously long time. Organically grown, low-intervention/natural wine, vegan.
