Delphine Boulard carries on the practice of organic and biodynamic winegrowing that she established with her father, Francis, in 2009. At that time, Francis believed so strongly in the importance of farming without chemicals that he split from his siblings and founded Francis Boulard et Fille with the three hectares of vines that constituted his portion of the family holdings. This ‘Vieilles Vignes’ blanc de blancs comes from a tiny slice of the original Boulard family vineyard in Cormicy, well north of the Montagne de Reims. The chardonnay grapes are harvested late to maximize ripeness and ferment with indigenous yeasts in wood, including malolactic fermentation. Aging takes place in Burgundy barrels, and the wine gets bottled without fining. Zero dosage is added after disgorgement. The oak treatment comes through subtly on the nose as a touch of spice, which complements crisp apple, lemon zest, and a salty minerality through to a beautiful finish.
