The Lazkano family has been making Txakoli for four generations in Getaria, the capital of Getariako Txakolina production, located a half hour’s drive west from San Sebastián. Here, perched atop a hillside overlooking the water, is the Gaintza cellar, which José Antonio established in 1923 and named for the high-altitude vineyards on clay and chalk soils (“gain” means high-up in Basque). "Bixigu" means "sea bream," a local delicacy in Getaria, and the influence of the Cantabrian sea can be distinctly noted in this refreshing rosé, a blend of equal parts Hondarribi Beltza and Hondarrabi Zuri grapes, grown sustainably and vinified using traditional practices in stainless steel. Briny, bright acidity and a touch of naturally occurring CO2 from the fermentation process dance over delicate layers of ripe red berries, cantaloupe, pickled watermelon rind, and an evocative Campari-esque finish.
