Domaine Gaujal de Saint Bon is a mother-daughter run estate-bottled property, and the oldest domaine in the Picpoul de Pinet sub-appellation of the Languedoc. Piquepoul is an ancient Languedoc grape variety that ripens later than most, and when planted in a dry climate, it takes advantage of the humidity of the late season to complete its maturation. Mother and daughter Simonne and Virginie Gaujal are fierce advocates of the picpoul grape, and strive to craft the truest expressions of Picpoul de Pinet. Over 80% of the wine produced in the region comes from four large co-ops, but the Gaujal women utilize low yields and longer lees aging (7-8 months of lees contact before bottling, often twice as long as other Picpoul de Pinet), to produce wines of distinctive texture and complexity. This elegantly styled picpoul matches floral aromas with a subtle texture and a zesty finish.
