Create an accountGonzález Byass was founded in 1835 by Manuel Maria González, and today remains a family affair into its fifth and sixth generations of operation. It is located in the heart of sherry territory in Jerez de la Frontera, Andalusia, where the influence of the Atlantic Ocean and Guadalquivir and Guadalete rivers creates a unique microclimate crucial to sherry production. This 12 year is the youngest amontillado, and sees four years of aging under flor and an additional four years of oxidative aging. Incredibly elegant on the palate, it gracefully balances notes of citrus, dried stone fruit, racy acidity, chalky limestone minerality, and a tangy, briny finish that just begs for pairing with charcuterie and assorted tapas.
