Create an accountMakgeolli is the oldest alcoholic beverage in Korea, dating back to the 10th century. This opaque (makgeolli means “roughly filtered”) rice wine is made from just three ingredients: rice, nuruk (a traditional wheat and barley-based fermentation starter, native to Korea, inoculated with wild saccharifying fungus, lactobacillus, and yeast), and water. Brooklyn-based Hana Makgeolli is the first domestic producer of traditional Korean rice wine, founded in 2020 by Alice Jun and John Limb. Their sool (the Korean word for alcohol, used to describe the broad category of rice wine) is made with organic rice from a family farm in California, and brewed using traditional techniques. A stronger ABV (8%) evokes Korea’s distinctive jeongtongju style, balancing between deep, earthy notes, creamy lactic acidity, and subtle tropical fruit notes. Playfully packaged in single serving-sized red cans, MAQ8 is sparkling, creamy, fruity, and savory, with lactic notes of ricotta-meets-white cheddar popcorn.
