Here we have serious grower Champagne for less than you might think! Hervé Rafflin maintains five hectares of 30-40-year-old vines in villages on the north side of the Montagne de Reims. Although more than half of the grapes grown in Hervé’s vineyards are pinot meunier, this cuvée has nearly equal representations of pinot noir, chardonnay, and pinot meunier, including some wine from a perpetual reserve. The wine undergoes malolactic fermentation and ages in stainless steel for eight months. Its final dosage amounts to a mere 1.8 g/l. The nose has at turns bright citrus, floral honeysuckle, and toasty brioche, while the palate adds a ginger spice note to a long, fresh lemon finish. Organically grown.
