Twenty years ago, while barely into their second decade themselves, Emilie and Brice Bolognini jumped headlong into an ambitious adventure: restoring 27 hectares of abandoned vines in the Costière de Nîmes. Their first year, 2003, they produced a vintage, and they’ve been honing in on their vision ever since, paring down their vineyards to 15 ha while converting them all to biodynamic viticulture. The vineyards are worked by human hands during the summer and by sheep during the winter. They lie on red clay and sandstone in a windy region not far from the Mediterranean, which imparts a signature saline, sea-breeze freshness to the wines. Colleague Eric Pfifferling of Domaine L'Anglore has become both a friend and collaborator, and “Les Salines” is a collective effort between them - with absolutely delicious results! Generous aromas of pomegranate and wild herbs lead into a palate full of food friendly acidity, that bursts with juicy red and black plum flavors followed by a squeeze of blood orange. Organically grown, biodynamically grown, low-intervention/natural wine.
