Originally from Normandy, Jonathan Maunoury settled in the Loire Valley less than a decade ago to found his own winery. He has found an interesting spot for making powerful and interesting wines in Puy-Notre-Dame, south of the city of Saumur, and has managed to shift his vineyards to biodynamic practices. The cabernet franc grapes for this cuvée come from one vineyard, “Le grand champ bourreau,” and are destemmed before a three-week maceration in tank. The wine then ages for 14 months in barrel. Rich, dark, and serious (but not too serious!), it marries a density of plum and other black fruit flavors with fall spice and a bright red apple finish. Certified organic, certified biodynamic, low-intervention/natural wine.
