Create an accountAna María Romero, the tequilera behind Mijenta, has developed a line of tequilas that focus on sustainability as well as flavor. The production process is carbon neutral: in addition to using recycled-glass bottles and recycled-paper boxes, Mijenta labels are made from agave waste. Ana María’s tequila comes from mature Blue Weber agave sustainably grown on red clay soil in the highlands of Jalisco. Deliberately cooked, fermented, and distilled, the unfiltered result is a fruity and mineral tequila that serves equally well on its own or in cocktails. In particular, this blanco highlights the fruit and spice flavors of the estate’s agave.
