The Biotteau family manages a handful of vineyards, in the Anjou-Villages area known as the Coteaux de l’Aubance, that straddle a fault line separating the Massif Armoricain and the Paris Basin. The slate of the former and the limestone of the latter bring out different characteristics of the cabernet franc (80%) and cabernet sauvignon (20%) in this blend: more minerally on one side, richer on the other. By vinifying each parcel separately, Pascal Biotteau and his team are able to create a unique blend for each year’s harvest. Fermented with indigenous yeasts, aged in concrete and unfiltered, the flavors of the unique terroir really shine: ranging from chalk and dried flowers to sandalwood and licorice. Sustainably grown.
