This 50/50 blend of chardonnay and savagnin (the ancient, somewhat obscure grape that is the signature varietal of the Jura) elegantly balances character and versatility. Grapes were hand harvested from 40 year old organically farmed vines, then cold soaked for four days with two days of skin contact. Fermentation occurred spontaneously with ambient yeast in amphora for 35 days, with an additional 12 months of lees contact before bottling. On the palate it is medium bodied and generously textured, with notes of golden delicious apple, Bartlett pear, quince, cantaloupe, and apricot skin accompanied by hints of spice and creamy, nutty overtones. Lip smacking acidity and an underlying saline streak linger on the finish, making this a great partner at the dinner table! Organically grown, low-intervention/natural wine.
