The Rare Wine Company has done their historical research. In exploring the market for Madeiras in centuries past, they found that different regions of what would become the United States had different preferences when it came to their favorite fortified wine. This ‘Charleston Sercial’ constitutes the driest in the series: much drier, in fact, than the ‘New York’ or ‘Boston’ offerings. Apparently residents of the Carolinas in the eighteenth-century preferred their Madeira drier than that imbibed by their northern counterparts. With the characteristic acidity of the sercial grape, this serious and complex Madeira unites hazelnut skin astringency with the caramelization of burnt sugar, without the sweetness. A sophisticated and, one might say historically appropriate, addition to any dinner party held on the east coast of North America.
