The vineyards at Six Eighty Cellars slope steeply down toward the western shore of Cayuga Lake. The name of the winery refers to the six hundred eighty-foot rise from the bottom of the lake to the uppermost point of the vineyards: a difference in elevation that contributes to the favorable conditions for growing an ambitious mix of grapes. Six Eighty has had success with varietals not commonly found in the Finger Lakes region, including grüner veltliner and pinot meunier, as well as the grapes they focus on most often: chardonnay and pinot noir. Winegrowers Dave and Melissa Pittard also experiment in the winery, using fermentation vessels in a variety of shapes and materials. This estate-grown chardonnay fermented with indigenous yeasts in a large sandstone “jarre.” With a full-bodied texture and deliciously salty minerality, this is world-class New York chardonnay with unique personality. Sustainably grown, low-intervention/natural wine.
