Approximately 37 kilometers south of Adelaide - the capital of South Australia - lies McLaren Vale, one of the earliest regions in South Australia to be planted to vines. Consistently considered one of the most esteemed wine growing regions in Australia, you can expect a Mediterranean climate, with the ocean moderating winter temperatures and sea breezes offering sweet relief on summer afternoons. Here you will Springseed Wine Co. led by Joch Bosworth and his partner Louise Hemsley-Smith. Bosworth took over from his parents who established the vineyards back in the ‘70s and converted to organic viticulture in 1995. The vines are fully certified ‘A’ grade organic by Australian Certified Organic, a process that takes four years and involves yearly audits and random sampling of produce. Fruit for this cabernet sauvignon is machine picked when it has achieved peak ripeness and are is then fermented in small open vessels. Twice-daily pumpovers gently enhance the color and development of aroma in the wine. Some of the wine will finish its ferment in older oak while some will finish in stainless steel tanks. The wine is then aged for 6 months prior to bottling, followed by additional maturation in bottle prior to release. If Home Depot had a garden party, this would be the wine for the occasion. Expect fresh potting soil and cedar on the nose and fleshy dark fruit on the palate. Juicy, ripe, and concentrated with lifted acidity. Roasted leg of lamb, beware.
