Located on the northern shores of the eastern half of Lake Balaton, the largest lake in Central Europe, the region of Balatonfüred-Csopak boasts over 2,000 hectares of vineyards renowned for their unique soil composition. Findings from the Roman period imply a history of winemaking that dates back to the second or third century. The Kovács family has been in Csopak for over 200 years, honoring their roots while maintaining an eye towards innovation, officially launching the Szent Donát estate in 1994. Named after the patron saint of Csopak and the protector of the wine harvest, the winery has been working organically since 2015, becoming certified in 2023. Inspired by the craft beer scene in Hungary, winemaker Tomás decided to produce this unfiltered, unfined, no-sulphur added, not disgorged, dry sparkling furmint. The fermentation was spontaneous in stainless steel tanks, with the secondary fermentation being completed in bottle. Bone-dry with leesy complexity, the soft effervescence is balanced by the strikingly lively acidity. A kick of white pepper adds a savory edge to a bouquet of gently steeped chamomile tea with a hint of rose. Certified organic, low-intervention/natural wine, vegan.
