In 1924 the Tatsis family began growing vines in the town of Goumenissa, situated a mere 65 km from Thessaloniki. Since then the estate has grown to now encompass 150 acres on the limestone hills of Limbaserit and Gerakona, and has been certified organic since 1998, with the addition of biodynamic methods in 2022. This unique white wine is 100% xinomavro, a dark skinned grape known for producing powerful red wines, made in a “blanc de noir” method. After destemming, the grapes are carefully crushed, extracting the juice without the pigments. Temperature-controlled fermentation then slowly takes place with native yeasts, and the wine spends up to a year on the lees in stainless steel tank, before bottling without filtration. Raspberry and strawberry notes on the nose mingle with cheesy, nutty, savory tones, and spiced stonefruit on a medium-bodied, wonderfully complex palate. It all finishes off with a bright, briny lip-smacking acidity. Certified organic, certified biodynamic, low-intervention/natural wine, vegan.
