Thousand Candles is the name of a property of 1100 acres in the Yarra Valley that includes cattle pastures and “bush,” as well as vineyards. The team calls their approach to farm management “biological farming”: they use careful scientific monitoring and balancing of the soil, water, and overall ecosystem to maintain the health of the vines without having to resort to chemical sprays. Their ‘Gathering Field’ pinot noir comes from select, east-facing parcels. Hand-sorted, destemmed, and fermented with minimal intervention, it spends six months in used French barrels and hogsheads. Dense berry and floral aromas mix with that of green coffee beans and leather. Lively on the palate, it finishes bright and fresh. Organically grown, biodynamically grown, low-intervention/natural wine.
