André-Jean Morin farms the land that has been in his family for generations. As a child, he used to follow his father’s tractor in search of ammonite fossils in the fields; in taking over the domaine, he made the spiral of an ammonite shell the symbol of the family winery. He and his wife, Héléana, also decided to make the switch to organic and biodynamic farming. This cuvée takes its name, ‘Terres Bleues,’ from the blue marl soils of its two lieux-dits, “Petit Curoulet” and “la Chenaillotte.” After pressing and settling naturally by gravity, the wine ferments with indigenous yeasts and ages for 18 months on the fine lees in foudre. As opposed to many white wines produced in the Jura, this savagnin is topped up weekly throughout the aging period, so a voile of yeast does not develop. This less oxidative style allows the fruity and rich savory character of the grape to shine on its own. Velvety lemon custard on the palate melds with touches of honey and almond butter, with a crisp apple finish. Certified organic, certified biodynamic, low-intervention/natural wine.
