Wines by Les Matheny are made in an old farmhouse, in the village of Mathenay, that Elise and Emeric Foléat have converted into a winery. With just three and a half hectares of vines in three well-regarded Jura appellations, Les Matheny make only a few wines—each unique year to year. Jura whites are famous for their sous voile aging—that is, for maturing and oxidizing slowly under a “veil” of natural yeast—a process that this chardonnay undergoes to subtle and complex effect. Emeric considers this a “partial sous voile” wine, which shows in the hints of hazelnut nuttiness, buttered toast, and spice on the nose. The palate bursts with green apple brightness and the texture of pear custard. And the lemon finish lasts and lasts. A beautiful wine. Organically grown, low-intervention/natural wine, vegan.
