Todd Cavallo and Crystal Cornish came north to the Hudson Valley from Brooklyn in 2016 and have since gained a reputation for their commitment to biodynamics and permaculture, as well as for their outstanding wines, ciders, and vegetables. For this concoction, Todd macerated callery pears from Wild Arc’s own trees in cider made from sustainably-farmed northern spy apples before aging the resulting pear-apple mix in stainless steel tanks for six months. Bright, fruity, and spicy, this can may surprise you with its depth and complexity.
